Melting Moments

6 tablespoons margarine or butter
¾ cup flour
3 tablespoons castor sugar
2 tablespoons custard powder
1 teaspoon vanilla essence

Cream margarine and castor sugar. Add flour, custard powder and vanilla essence, mix in. Roll into balls in your hand and then press flat with a fork. Cook at 180 deg for approx. 8 minutes

Chocolate Cake

1 ½ cups flour
1 ½ cups sugar
6 ozs butter
½ cup milk
½ cup cocoa
3 eggs
3 flat teaspoons baking powder

Cream butter and sugar and yokes of eggs. Dissolve cocoa in ½ cup hot water, add. Add milk and flour. Beat well, then add beaten whites of egg and baking powder. Put in oven for 20 minutes. Allow to cool. Vanilla or chocolate icing, yummy!

Crumpets

Beat 2 eggs, add 4 tablespoons sugar. Stir in 8 tablespoons flour and 4 flat teaspoons baking powder. Add milk to make right consistency. Cook on hot buttered hot plate or pan. Serve with syrup and cream.

Crown Jewel Cake

8oz self raising flour (or 4oz self raising wholemeal and 4oz self raising white)
4oz castor sugar
4oz margarine
12oz mixed dried fruit
1 teaspoon ground mixed spice (optional)
2 eggs
A little milk

Rub in flour and marg until mixture resembles fine bread crumbs. Stir in fruit and sugar. Add eggs and sufficient milk to make mixture soft (about 1-2 tablespoons). Bake at 150 deg C for approx. 2 ½ hours. Cool and turn out.

Banoffee Pie

8oz biscuit base – digestive biscuits and butter
Tin condensed milk
10oz butter
bananas
6 caster sugar
double or whipping cream
flake or grated chocolate

Make biscuit base by crushing digestive biscuits and stirring in 4oz of butter in shallow pie dish. Place rest of butter and sugar in a saucepan and heat until butter is melted. Stir in condensed milk. Bring to boil stirring continuously and boil for 3-4 minutes still stirring, until mixture resembles light caramel.

Just before serving slice banana onto the biscuit base. Cover with caramel and then put another layer of sliced bananas and then cover with whipped cream. Top with crushed flake or grated chocolate.

Jam Squares

250g butter
½ cup sugar
1 egg
1 ½ teaspoons vanilla essence
2 cups flour
2 teaspoons baking powder

Whip butter and sugar until creamy, add beaten eggs and vanilla, add flour and baking powder. Press into baking pan and layer it with jam, grate a little mixture over the top and bake at 180 deg for 15-20 minutes. Check often.

Date Loaf

4oz margarine
1 teaspoon bicarb of soda
1 cup sugar
½ cup warm water
2 cups flour
2 eggs
1 teaspoon vanilla essence
1 cup chopped nuts
½ lb dates (500g)

Soak dates and soda in warm water until soft. Cream butter, sugar and eggs well. Add dates. Beat well. Add flour, nuts and vanilla. Pour into greased loaf pan. Bake at 180 deg C for 1 ¼ hours.

Chocolate Crunchies

250ml flour
5ml baking powder
12.5ml cocoa
250ml coconut
250ml oats
125ml sugar
175ml margarine

Sift dry ingredients (flour, baking powder and cocoa) into a bowl. Add oats, coconut and sugar, and melted margarine and mix. Press into greased pan and bake at 200 deg C for 15-20 minutes.

Icing

Mix together 250ml icing sugar and 12.5ml cocoa and a little water.
